Weekend Highlights

Unfortunately, the weather won out this weekend and we were forced to stay inside. I did not let that get me down and I think we made it into a pretty good time. Friday night was spent grilling out and cheering on the Panthers in their first pre-season game. My Saturday long run was rained out so I opted to do a few miles on the treadmill and catch a kickboxing class. Then Joe and I enjoyed a day date watching Guardians of the Galaxy. 

The movie was a surprise hit with both of us. It was very funny and had bits of adult comedy thrown into the action. After the movie, we stopped by a frozen yogurt shop for a mid-afternoon treat. I tried to play it safe and kept my toppings light.  Every time I get frozen yogurt, I always want more immediately afterwards. It is delicious but not too filling I guess- or I just have a MAJOR sweet tooth. Honestly it is most likely a bit of both.

We kept it low key Saturday night and enjoyed homemade flatbread pizzas while watching more football. I'm going to be in trouble once the season really kicks off. I may never have control of the TV again!

Sunday after church, I headed to Coquette in North Hills to have brunch with a few new friends. We were able to snag a table in their bar area and bypass the hour wait. Their brunch menu is concise featuring only two to three different types of omelettes, quiches or salads.  I enjoyed their omelette of the day which was mushrooms and asparagus with rosemary potatoes and it was delicious! It was the perfect size for brunch- I tend to find breakfast portions way too generous so a lot goes to waste. 

I spent the afternoon cooking up another batch of S'mores layer bars for Joe's work. I can't wait to share the recipe with y'all tomorrow. Just a warning these are not diet friendly at all. Plus it takes a lot of willpower to exercise moderation..

We were able to get outside late Sunday afternoon after the rain clouds rolled away. It was nice to unwind and get in a nice long walk to start the week.

When it comes to staying on track with my diet to lose weight, menu planning is key. Here is what I have got planned for dinner this week. 
Dinner Menu
Monday- Salmon with Balsamic Glaze with Sauteed Green Beans  

Tuesday- Thai Peanut Chicken with Brown Rice


Wednesday & Thursday- Leftovers/ Dinner in Wilmington


What is your favorite football team? I cheer for the Panthers since they are local to NC. When it comes to college sports, I have decided to just enjoy the game. The rivalry is way too heated in the Triad for me!

  2. Oh! Coquette is awesome! I feel the same way about breakfast portions! I miss brunching! Our small town doesn't really offer any brunch locations...we do have a cracker barrel about 20 mins away--but that gets old fast :) That s'more bake looks SO freaking yummy!
